May be a part of the issue, project files are located on a "shared mount point" (double boot Linux/Win) :
/dev/nvme1n1p2 on /media/Local/WinNVMe type fuseblk (rw,noatime,user_id=0,group_id=0,allow_other,blksize=4096)

Description
I currently have the problem with version 9.0.2, but I noticed issues few versions back. I cannot remember exactly which.
When saving modification to qmake file, .pri files or to the main project .pro file, changes are not detected, and project settings, file list, etc, are not updated.
It may work as expected after a long period of time (I've just tested after about 5 hours). It may also work few times just after starting QtCreator.
But in between, the wrong behavior starts quickly, changes to .pri or .pro files are ignored.
Switching sessions to another and back to the problematic one forces QtCreator to reload these files. But eventually, the wrong behavior starts again.
This problem may have a link with this issue : Editing qt project file does not affect projects tab
